We used to visit my grandparents during the Summer and one of the highlights of our visit would be Sunday Dinner at Grandma’s. Everyone wanted Grandma Ice to make a Roast.

Not me I wanted Uncle Chick to make Poor Man Soup for me. I was blessed when he gave the recipe to my dad who would make this for me for my Birthday dinners.

I have the recipe now that my Aunt Sue handed it down to me and even though I can make Poor Man Soup for my family it doesn’t taste as good as what they would make.

Dumpling Soup | Allrecipes

Ingredients

  • 4 large Potatoes
  • 2/3 cup Butter
  • 2/3 cup Flour
  • 1 1/2 quart Milk
  • Salt & Pepper to taste
  • 4 green Onions, chopped
  • 1 cup Sour Cream
  • 2 cups crisp-cooked crumbled Bacon

Instructions

  1. Peel one Potato for everyone eating and at least 2 extra Potato if not more as you will want to have left overs.

2. Cut potatoes in small chunks.

3. Boil Potatoes until almost all the way cooked.
 

4. Melt Butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended.
 

5. Gradually add Milk to the Butter-flour mixture, whisking constantly.

6. Whisk in salt and pepper and simmer over low heat, stirring constantly.
 

7. When milk mixture is very hot, whisk in Potato’s.

9. Make Flour and Egg Dumplings add them to the Potato’s

8. Once the Dumplings float to the top add green onion, and crumbled Bacon. Heat thoroughly.

Serve with French Bread or any bread of your choice.
