I thought I would kill two Birds with one stone this evening and share two #Holidays that fall on September 22nd which is National Ice Cream Cone Day #IceCreamConeDay and National White Chocolate Day #WhiteChocolateDay which if you were to ask Charlie and I these two products go hand in hand don’t they?

Although I like Ice Cream Cones I prefer my Ice Cream in a bowl. What about you and why?

Homemade Ice Cream Cone

Ingredients

  • 2 large eggs
  • ½ cup white sugar
  • ¼ cup butter, melted and cooled
  • 3 tablespoons milk, or as needed
  • ½ teaspoon vanilla extract
  • ⅓ cup all-purpose flour
  • ⅛ teaspoon salt
  • 3 tablespoons vegetable oil, or as needed

Directions

  1. Gather all ingredients.
  2. Whisk together eggs and sugar in a large bowl until frothy.
  3. Whisk in butter, milk, and vanilla. Gradually whisk in flour and salt until smooth. The batter should be thin; you can stir in more milk if needed.
  4. Heat a small skillet or griddle over medium heat. Brush the pan lightly with oil. Pour about 1/4 cup of batter onto the skillet and turn to spread out the batter into a thin circle. When the underside is golden brown, flip over and cook until golden on the other side. Remove from the pan and form into a cone while it’s hot, squeezing the end to seal.
  5. Place on a wire rack to cool and harden completely. Repeat with the remaining batter.

White Chocolate seems like a paradox doesn’t it? How can White and Chocolate exist at the same time on the same Cookie or in the same vat of Ice Cream? All people can say is, it can happen., National White Chocolate Day on September 22nd is proof-positive that this delicious combo rates its own Holiday. Doesn’t it?

Although the FDA officially recognized White Chocolate as being Chocolate in 2004, the question of its authenticity is still being hotly debated even today. We say, there’s no time for arguing when we could be celebrating National White Chocolate Day in the only logical fashion: by finding a Cookie, Cake or even Liqueur that includes White Chocolate basking in non-debatable sweet creamy goodness!

National White Chocolate Day Activities

  1. Instead of the usual non-fat, no-Sugar-or-Cream Coffee you dutifully make each morning, just for National White Chocolate Day, try melting a few White Chocolate Chips into a steaming cup of Cocoa for a luscious alternative. You’ll thank yourself, when your usual Coffee tastes better than ever.
  2. White-Chocolate-covered Pretzels create the perfect snacking storm: creamy, sweet, salty, crunchy. If you’ve never had a White-Chocolate- covered Pretzel, may we suggest you take National White Chocolate Day as permission to dig in?

  3. ​There are good and not-so-good fake versions of White Chocolate out there, so look for products with a creamy pale yellow color with no food coloring added, made with at least 20% Cocoa Butter less may extend its shelf life, but how long is White Chocolate likely to sit on a shelf anyway?

White Chip Chocolate Cookies

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups white sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ⅔ cups white chocolate chips

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
  2. Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy.
  3. Add eggs, one at a time, beating well after each addition. Stir in vanilla.

  5. Fold in white chocolate chips.
  6. Drop by spoonfuls onto ungreased baking sheets.
  7. Bake in the preheated oven until set, 8 to 10 minutes. Remove from the oven, let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
