Save time without sacrificing flavor! These easy-to-make breakfast tostadas are topped with crumbled queso fresco, fresh cilantro and tangy Herdez Gucamole Salsafor a fresh, zesty flavor that cooks up fast.

Ingredients:
- 1 teaspoon olive oil
- 1/4 cup white onion, finely chopped
- 3 large eggs, beaten
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup Roma tomato, chopped
- 1 jalapeño, seeds removed and chopped
- 1 5.4 ounce package Herdez Gucamole Salsa
- 4 tostadas
- 1/2 cup Herdez Gucamole Salsa
- 1/4 cup Queso Fresco, crumbled
- 1 tablespoon fresh cilantro, chopped
- 2 radishes, sliced
Serves 4
Directions:
- Heat olive oil in medium skillet over low-medium heat. Add onions and cook 30 seconds.
- Pour in eggs and stir slowly 3 to 4 times.
- Season with salt and pepper, add tomato and jalapeño.
- Stir eggs until set. Remove from heat, cover and set aside.
- Prepare HERDEZ™ Instant Refried Beans according to package instructions.
- Spread beans between tostadas and top with scrambled eggs.
- Drizzle Herdez Gucamole Salsa and sprinkle with queso fresco, cilantro, and radish slices.
