I knew as soon as we would reach the letter e in Our Favorite Foods from A to Z Letter E. I would share Eggs which isn’t just for breakfast. I thought I would do Eggs Over Easy or Scrambled Eggs .

Then I thought I would share a recipe for Egg Salad. David loves when we go shopping at Thom Thumb as they have a great Egg Salad you can purchase in the deli.. Do you like Egg Salad? Or are you like me and snack on Boiled Eggs?

Fluffy Egg Salad Sandwich - Jillian Fae Chef Services

Ingredients:

  • 8 eggs
  • 1/2 cup Kraft Mayo Real Mayo ore Hellman’s Mayo
  • 1 teaspoon prepared yellow mustard which I don’t use but David’s mom does
  • 1/4 cup chopped green onion I use in mine but not David’s
  • salt and pepper to taste
  • 1/4 teaspoon paprika which you don’t not have to use
  • David’s mom used Relish to taste in her Egg Salad in place of Pickles which I don’t use.
  1. Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  2. Place the chopped Eggs in a bowl, and stir in the Mayonnaise, Mustard and green Onion. Season with salt, pepper and Paprika. Stir and serve on your favorite bread or crackers.
