October 1st is National Homemade Cookies Day #HomemadeCookieDay and I can’t wait to make Cookies this evening with David and Charlie. I wonder what Cookies Charlie will choose to make. If it was up to me I would make Peanut Butter Cookies but David would want something with Coconut. As for Charlie I think he will choose Chocolate Chip Cookies without Nuts.

Don’t worry I will sneak some of Charlie’s Dough and add Nuts to some of the Cookies. Would you like to join us in baking Cookies and we can make your favorite Cookies. Before were done though we will need to make White Chocolate Macadamia Nut Cookies which is my families favorite Cookies. What about you?

  2. A great Cookie starts with a strong foundation: the Dough. Once you have the Dough, the possibilities are endless. Add your favorite Nut, dried Fruit, Candy, or any special ingredient to create your own signature Cookie.
  3. This year, National Homemade Cookie Day is on a Sunday and to celebrate host a Cookie baking contest at your neighborhood Community Center, Church, or your home invite your friends and family to bring there favorite Cookies. Encourage the participants to create a family recipe, or share one that’s been passed down to them. I wish I had the recipe for the Cookies David’s grandmother used to make to surprise David with but I don’t know anyone in David’s family that has it. Nor do I know what was in the Cookies so I can’t get Charlie to try and help me recreate these Cookies. Which is why it’s so important to pass down family recipes.

Recipe for Peanut Butter Cookies

Prep Time: 15 mins Cook Time: 10 mins Additional Time: 1 hour Total Time: 1 hour 25 mins Servings: 48 Yield: 4 dozen

Ingredients

  • 1 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Directions
  1. Gather all ingredients.
  2. Beat butter, peanut butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth; beat in eggs.
  3. Sift flour, baking soda, baking powder, and salt into a separate bowl; stir into butter mixture until dough is just combined. Chill cookie dough in the refrigerator for 1 hour to make it easier to work with.
  4. Preheat the oven to 375 degrees F (190 degrees C). Roll dough into 1-inch balls and place 2 inches apart onto ungreased baking sheets. Flatten each ball with a fork, making a crisscross pattern.
  5. Bake in the preheated oven until edges are golden, about 7 to 10 minutes.
  6. Cool on the baking sheets briefly before removing to a wire rack to cool completely.
