I wanted to share a couple holidays that fall on February 18th, which is National Crab Stuffed Flounder Day #nationalcrabstuffedflounderday and well as National Drink Wine Day #nationalwineday which I believe would go well with Crab Stuffed Flounder which Charlie and I will pass on. But would make a nice dish for Charlie to prepare in his Homeschool Cooking Class. National Crab Stuffed Flounder Day is on February 18th, and is certainly a day of celebration for Seafood lovers including my family. For those that didn’t know Crab-Stuffed Flounder is composed of a combination of Crab Meat, Butter, Bread Crumbs, and Seasoning, these ingredients are stuffed into the Flounder or rolled up into the Fillets and baked. I have a question for you. Did you know there are 100s of different species of Flounder and this Flatfish is generally divided into right-eyed and left-eyed families.

The origins of National Crab Stuffed Flounder Day remain unknown, but it is a holiday set aside to commemorate the dish’s unique and intriguing flavors. This Seafood delicacy is usually made by stuffing a mixture of Crabmeat, Butter, and Breadcrumbs into a whole Flounder. The Crab mixture is sometimes rolled up into Flounder fillets to make Roulades. As we all know there is an abundance of holidays dedicated to food throughout the year, National Crab Stuffed Flounder Day is one of the more well-known holidays although there are people who have never heard of National Crab Stuffed Flounder day like my family. The holiday is worth celebrating.

Crab Stuffed Flounder

Ingredients

  • 1 ½ pounds Flounder Fillets
  • 1 cup Crabmeat – drained, flaked and cartilage removed
  • 3 crushed Saltine Crackers
  • 1 tablespoon finely chopped Green Bell Pepper
  • ¼ teaspoon ground dry Mustard
  • ¼ teaspoon Worcestershire Sauce
  • ¼ teaspoon Salt
  • ground White Pepper to taste
  • 1 Egg white
  • 1 tablespoon Mayonnaise
  • ¼ cup Butter, melted

Topping:

  • 1 Egg yolk
  • 5 tablespoons Mayonnaise
  • 1 tablespoon dried Parsley
  • ½ teaspoon Paprika

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Rinse the Flounder Fillets and pat dry with paper towels. Lightly grease a shallow baking dish.
  2. Combine Crabmeat, crushed Saltines, Bell Pepper, Mustard, Worcestershire Sauce, Salt, and White Pepper together in a medium bowl. Combine Egg white and 1 tablespoon Mayonnaise in a small bowl; stir into Crabmeat mixture.
  3. Brush Fillets with melted butter; place in the prepared baking dish. Spoon Crabmeat mixture over Fillets and drizzle with any remaining butter.
  4. Bake in the preheated oven for 15 minutes.
  5. Meanwhile, make topping: lightly beat Egg yolk in a small bowl. Stir in 5 tablespoons of Mayonnaise. Remove the Fish from the oven and spread this mixture over stuffing; sprinkle with Parsley and Paprika.
  6. Increase oven temperature to 450 degrees F (230 degrees C) and bake until golden and bubbly, about 5 or 6 minutes.

I would like to share a Holiday which is going to make David very happy. It’s National Drink Wine Day which is held each year on February 18th. Get ready to unwind with a glass your favorite Wine. Wine has been a staple in human culture since its invention in 7000 BC. Some ancient societies enjoyed Wwine so much, they even worshiped it! These days, hundreds of types of Wine are produced all over the world, so there’s an endless variety to choose from.

HISTORY OF NATIONAL DRINK WINE DAY

We know humans have been making Wine for thousands of years, but no one is certain who was the first to ferment Grapes into the beverage we now call Wine. Evidence of ancient Wine production has been found in China, the Middle East, and Greece, so it appears many different cultures discovered the process at nearly the same time.

The oldest known Winery was found in a cave in Armenia, and is over 4,000 years old — The venters there were using a Grape still used to make Wine today! Here is a fun fact for you. Barrels of Wine have been found in the tombs of Egyptian Pharaohs, and the Ancient Greeks used Wine in secret religious ceremonies.

Although Wine has taken all sorts of different forms throughout the ages, the process has changed very little in the thousands of years since its invention. Grapes are crushed, pressed, and fermented, and the mixture is sealed into barrels. The mixture is aged, and then bottled. Using these simple steps, an infinite variety of Wines can be created, and different regions of the world are known for the distinctive vintages they produce.

Things like soil, temperature, and weather all affect the way Wine grapes grow, and make each batch unique. Two bottles of the same Wine from the same vineyard might taste totally different depending on the year they were produced, and some vintages become highly sought after as a result.
