My Moms Potato Salad was the best I ever tasted. Since she has passed away it is hard to find the potato salad that taste like hers. No matter where we go I can’t find any Potato Salad I like. So I thought I would try to make Potato Salad like she did and shared the Recipe with you. Moms Potato Salad provided by Schlitterbahn’s Mom’s Ice Chest
Ingredients
Ten potatoes ( or one for each person your feeding and two extra)
A stalk of celery
One onion
Dill Pickles
8 Eggs (6 for the Potato Salad and 4 to decorate it with)
Mayonnaise
Mustard
Boil the potatoes till until they are partially cooked Take them out and cube them. Some people like to mash them so it is your choice as to which way you do them. Cut the onion, 4 stalks of celery and the pickles up in a bowl. Cut the eggs up. Then add them to the Potato Salad. Add Mustard and Mayonnaise to taste. You can use either Mayo or Mustard but in our home, we like to use both. Add Paprika and Eggs to the top of the bowl. I make my Potato Salad the night before so it is nice and cold.
When I was growing up, we made Fried Chicken and Pork n Beans to take on the Picnic with us. The Fried Chicken was my dad’s recipe and one day I will share it with you.
With Summer her before we know it it has always been my goal to take Charlie to Schlitterbahn Water Parks and if I was able to take my family this would be the perfect Picnic to take with us.
