As I begin the busy day I have today I wanted to share the newest #Holiday with you. Welcome to Wednesday March 18th National Lacy Oatmeal Cookie Day #LacyOatmealCookieDay. here is a fun fact for you I’ve not sure I’ve had a Lacy Oatmeal Cookie but I wouldn’t mind trying one today.

Let’s go to the Grocery Store and pick up different brands of Oatmeal Cookies including lacy Oatmeal Cookies but remember my #Oatmeal Cookies can’t have Raisins because I don’t like Raisins. Before you ask Charlie used to like Raisins so I will get some Oatmeal Cookies with Raisin for Charlie and David. Then you will have a choice of which Cookie you want to try.

Recipe for Oatmeal Lace Cookies

Original recipe yields 48 Cookies

Ingredients

  • nonstick cooking spray
  • 1 cup quick cooking oats
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 cup white sugar
  • ½ cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

Bake cookies in the preheated oven until edges turn golden, about 10 to 12 minutes. Cool cookies on baking sheet, about 10 to 15 minutes, then peel them off with your fingers. Repeat with remaining dough, re-spraying baking sheets with nonstick cooking spray between batches.

Preheat the oven to 325 degrees F (165 degrees C). Cover baking sheets with foil, then coat the foil with a nonstick cooking spray.

Combine oats, flour, salt, and baking powder in a medium bowl. Beat sugar and butter in a large bowl until fluffy. Beat in egg and vanilla. Mix in flour and oat mixture until just combined. Drop dough by teaspoonfuls onto the prepared baking sheets, 2 ½ inches apart.
