My sister and my dad love Asparagus and when he was here they would eat cans of Asparagus together. This year for Thanksgiving I was thinking Charlie might try and make Fresh asparagus and Cheese Sauce for his aunt as part of his Homeschool Cooking Class. The more I thought about it though the more I worried about Leftovers.
I had Charlie go online and look for ways to preserve the Leftovers and Charlie figured out how to freeze Asparagus which Debbie would have some for New Years. Would you like to join us for dinner and you can eat the Asparagus with Debbie which my family plans on passing on. Although I could send some home to my niece Alyssa because I think she east Asparagus with Debbie. Just like Suzzie did but we all know she isn’t here to share with Debbie.
How to Freeze Asparagus
Supplies:
A bowl of ice water
1 pound of Asparagus
6 cups of water
Paper Towels
Food saver or freezer bags
Directions:
Snap the ends of the asparagus and discard the woody ends.
Boil 4 cups of water.
Place 2 cups of water and the ice into a large bowl.
When the water has come to a boil, drop the asparagus into the boiling water.
Allow to cook for 3 to 4 minutes, until the asparagus turns bright green.
Remove the asparagus from the boiling water and immediately place it in the ice water.
Remove after 30 seconds.
Place the asparagus on paper towels and allow to drain.
Pat the asparagus dry.
Place it in a food saver or freezer bag and remove as much air as possible.
Place in the freezer for up to a year.
