School will be resuming soon and I can’t wait to start our Cooking class. One thing Charlie asked for this year is to learn more Gluten-Free Recipes and I agreed with Charlie. As I thought this might keep his stomach from hurting all the time.
If you’re looking for a delicious Gluten-free, Chocolate Muffin-Cookie hybrid, I’ve got the recipe for you. These Gluten-Free Double Chocolate Chip Muffcookies are extra Chocolaty and will satisfy your sweet tooth.
Best of all, they use simple, whole ingredients like PB2 Almond powdered NutButter, Banana and Vanilla Extract for amazing flavor without the guilt.
This recipe will be a new family favorite and will curb everyone’s Chocolate cravings without the extra Sugar. Plus, it meets a variety of dietary preferences so it can be enjoyed by everyone!
Gluten-Free Double Chocolate Chip Muffin Cookies

Ingredients:
- 1 Banana medium
- 1 Egg large
- 8 tbsp dry PB2 Almond mix with 6 tablespoons of Water to reconstitute
- 1 tbsp Coconut Oil
- 1/3 cup Cocoa Powder
- 4 Stevia packets
- 1 teaspoon Vanilla extract
- 1 Salt pinch
- 1/4 cup Chocolate chunks or chips, you can use Sugar chips, super dark Chocolate chips- your choice
- 1 tbsp chopped Nuts, optional
Directions:
- Preheat oven to 350º f.
- Spray 5 spots on a 6-count cupcake tin.
- In a blender, add Banana, Egg, reconstituted PB2 Almond Flour, Coconut Oil, Cocoa Powder, Stevia, Salt, and extract. Blend until creamy- about 20 seconds.
- Scrape batter from blender and add to cupcake tins. Batter will fill 5 spots halfway.
- Sprinkle Chocolate chips on top of each Muffin spot.
- Bake for 12-15 mins or until a toothpick inserted in the center of the Muffin Cookies comes out clean. Allow to cool before removing them with a rubber spatula
