Charlie’s Birthday Party is Saturday and I wanted something new and different to serve that would be healthy. I have decided to make Dark Chocolate Zucchini Muffins
- 2.5 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup maple syrup
- 3 large eggs
- 1/2 cup melted coconut oil
- 1 teaspoon vanilla
- 2 cups grated zucchini, patted dry
- 1 cup dark chocolate morsels
INSTRUCTIONS
- Preheat the oven to 350F.
- In a medium bowl, combine the flour, cocoa powder, salt, and baking soda.
- In a separate bowl, whisk together the maple syrup, eggs, oil, and vanilla. Stir into dry ingredients just until moistened.
- Fold in zucchini and chocolate morsels. Fill greased or paper-lined muffin cups two-thirds full. Bake for 18-22 minutes or until a toothpick comes out clean.
