David asked me what I wanted for dinner the other night and I said Pork Chops. Before I could say I would like to have them cooked on the Grill David say’s oh good we can have Country Fried Pork Chops.
I like Country Fried Pork Chops as well but Country Fried Pork Chops aren’t good for me. Not, only that they are not on my diet and if I want to lose weight I must stay away from Fried foods of all kind.
Ingredients:
6 Pork Chops
1 Cup Flour
1 Teaspoon Salt
1/2 teaspoon Pepper
4 tablespoons Oil
2 cups Milk
DIRECTIONS
1. Mix flour, salt and pepper in a plate or shallow dish.
2. Dredge pork chops in seasoned flour (reserve unused flour).
3. Heat 4 tablespoons of oil in a large skillet.
4. When hot, add the flour coated pork chops and brown on medium-high.
5. Turn and brown on the other side.
6. Add 1/4 cup water.
7. Reduce heat, cover pan and simmer for 30 minutes or until pork chops are done.
8. Remove cover, increase the heat and re-crisp the chops.
9. Remove chops to a paper towel lined plate.
`10. Stir up any flour “crispies” to loosen.
11. Add more oil if needed to make about 3 tablespoons.
12. Add 3 to 4 tablespoons of the reserved seasoned flour to the hot oil, stirring constantly with a whisk until lightly browned.
13. Add 2 cups of milk all at once and continue stirring until thickened and bubbly.
14. If the gravy is too thick, add some water.
15. Add a couple of drops of gravy coloring (Kitchen Bouquet) if needed to give the gravy a rich color.
16. Season with salt and pepper.
17. Serve pork chops with cream gravy.
I wish we was home tomorrow to make these for dinner. But we will be in Oklahoma until Monday. The next time David is off and Charlie is home we will fix Country Fried Pork Chops, Cream Gravy, Homemade Mased Potatoes and Green Beans.
Now, all I need to decide is what to serve for Dessert. I wonder if I could find a recipe for a Italian Cream Cake which David has been asking for when we go grocery shopping.
Thank you,
Glenda, Charlie and David Cates
