Chocolate Covered Raisin Waffles

Did you know that today is chocolate covered raisin day? In honor of the occasion I have a decadent spin on breakfast to share. This chocolate covered raisin waffles is decadent and adds a tasty serving of fruit to your day.

I love to run across raisinettes at the candy display and running across one in a handful of bridge mix always makes me smile. Today I wanted make something special that incorporated a loved candy into our day. The treat has candy covered; and they certainly don’t work well with meat and potatoes.

I started thinking how I could work them in a meal and I came up with an easy and delicious recipe to share with you! Chocolate Covered Raisin Waffles are so tasty and easy. You can use your favorite waffle recipe to make these tasty treats. What a way to start your day!

The recipe I used is easy and will last in the fridge for 2 to 3 days, so make it ahead of time for a really easy breakfast,with or without the raisins!

Ingredients

2 eggs

2 c flour

1 2/3 c milk

1/2 c vegetable oil

2 tablespoons sugar

4 teaspoons of baking powder

pinch of salt

1 teaspoon vanilla

1/2 to 1 cup of chocolate covered raisins

Instructions

Preheat waffle iron.

Beat eggs in large bowl with hand beater until fluffy.

Add in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, until smooth.

Add chocolate covered raisins and mix.

Spray preheated waffle iron with non-stick cooking spray. Pour mix into hot waffle iron. Cook until golden brown. Serve hot.

You can drizzle chocolate on top of these, if desired, but the raisins will melt nicely and give you much of the same effect. I want to try these with whipped cream next time!
