I haven’t been feeling l this morning with the Rain and didn’t want to cook a full meal this evening when I remembered Bryan Stoddard sent me a recipe for a soup he likes to make and I thought you might like to see the recipes as well
Bryan Stoddard, is currently running a website called Homewares Insider, I love making this soup especially in wWnter because it warms me up, but it’s also solid enough as a stand-alone meal so I don’t have to prepare anything more.
The Soup is also a good choice for both lunch and dinner. I’ve been running Homewares Insider for the last few years, and it’s been my primary occupation. It’s all about DIY projects, home, and garden design, tips and tricks. Outside of work, I also love to tinker around small projects like shelf building or working on my car.
After the holidays I always feel the need to eat somewhat lighter food, and since I incorporated gluten-free meals in my diet, I’ve found many great recipes.
One of them is a great gluten-free soup, ideal for this cold time of the year, made out of pumpkin and served with vegetables and (if you’re not vegetarian) ground meat.
1 lb of ground beef
1 onion
1 large red paprika
1 and a half lbs of pumpkin
4 cloves of garlic
1/2 lbs of corn
1 lb of cooked beans
1 lb of chopped tomatoes
salt
ground pepper
4 cups of chicken soup base
The first step is to slowly cook the meat in a deeper pan until it released enough water and considerably softened. Add a cleaned and chopped onion, as well as the paprika. Continue to stew until it all softened. After you’re satisfied, place it in a bowl.
Secondly, on the leftover meat and fat add pumpkin and half your corn, stew for 4 to 5 minutes while stirring. Add soup base and leave to cook for 15 minutes until the pumpkin softens. After the pumpkin softens, remove from the fire and mash the mixture.
Return the soup to cook, add what’s of left your corn, add beans, tomato, salt, pepper, and ground beef. Cook for another 15 minutes.
You can serve this with cheese or gluten-free bread.
