August 19th is National Potato Day #PotatoDay and I don’t know about you but in our home its’ not dinner if we don’t have some kind of Potato, Mack N Cheese,, Stover Top Stuffing and sometimes Rice. Is it this way in your home?

David likes Fries and Mashed Potatoe’s Instant or Fresh it doesn’t matter as long as he has Potatoes. Charlie likes Scalloped Potatoes and we usually purchase Betty Crocker. Then there is me I love Loaded Baked Potatoes, Mashed Potatoes especially Homemade.

More than that I love Hashbrowns and Potatoe Cakes but even more than that I love Fried Taters with Onions lots of Onions. David and Charlie will not eat Potatoes with Onions. Will you? If so would you like to join me for dinner?

Recipe for Twice Baked Potatoes

Ingredients

  • 4 large baking potatoes
  • 8 slices bacon
  • 1 cup sour cream
  • ½ cup milk
  • 4 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded Cheddar cheese, divided
  • 8 green onions, sliced, divided

Directions

  1. Gather ingredients and preheat the oven to 350 degrees F (175 degrees C).
  2. Bake potatoes in the preheated oven until tender, about 1 hour, depending on the size of your potatoes. Set potatoes aside until cool enough to handle.
  3. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  4. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
  5. Add sour cream, milk, butter, salt, pepper, 1/2 cup cheese, and 1/2 of the green onions to the potato; mix with a hand mixer until well blended and creamy.
