This morning for the A to Z Challenge Letter U Upside Down Cake is the recipe I wanted to share with everyone. It’s for a Pineapple Upside Down Cake one of my mom’s favorite desserts.

Mother’s Day right is around the corner. I wish my mom was here to have a slice with me. Everyone knows my mom isn’t so I’ve been thinking about making the Pineapple Upside Down Cake for myself.

If the Pineapple Upside Down Cake turns out the way I hope it does I would like to invite my friend Debbie over to have a slice of the cake . Debbie loves Pineapple Upside Down Cake but her family doesn’t so she never gets a slice.

I will need to purchase a Bundt Cake Pan because I don’t have a
Bundt Cake Pan and haven’t ever had one. Although I remember my grandmother had a Bundt Cake Pan and Dorie always used Bundt Cake Pan to make Pineapple Upside Down Cakes in.

I wish I had my grandmother’s Bundt Cake Pan because having Dorie’s
Bundt Cake Pan would like having a piece of my grandmother with me. My friend Debbie knew my grandmother as well and we could share memories of her from when we was growing up.

Ingredients

2 tablespoons butter,

Melted 1/4 cup packed brown Sugar

6 Pineapple slices (from 20-oz can), drained reserving juice

6 Maraschino Cherries 1 box Betty Crocker™ Super Moist™ yellow cake mix

1 cup reserved Pineapple juice (from can of Pineapple)

1/2 cup Vegetable Oil

3 eggs SAVE $Buy Ingredients.

Steps

  • 1 Heat oven to 350°F. In 12-cup fluted tube (bundt) cake pan, pour melted butter. Sprinkle brown sugar evenly over butter. Line bottom of pan with pineapple slices. Place 1 cherry to center of each pineapple slice.
  • 2 In large bowl, beat cake mix, pineapple juice, oil and eggs with electric mixer on low speed until moistened; beat 2 minutes on high speed. Pour into pan over fruit.
  • 3 Bake 40 to 45 minutes or until cake is golden brown and springs back when touch lightly. Cool cake in pan 10 to 15 minutes. Plate heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm or cool.
