How To Make Banana Ice Cream

Making ice cream at home requires a lot of time and effort. Unless it’s banana ice cream. Kids love banana ice cream. Moreover, moms are also happy as it is healthy and full of calcium. The dense and starchy texture of bananas makes them perfectly suited for making ice cream.

Before making a banana ice cream make sure that bananas are not bruised or patched. You can buy frozen bananas to quickly pull this ice cream recipe anytime.

Here is a banana ice cream recipe for your kids. It’s a classic recipe using milk, egg yolks, real cream, with a touch of sugar. 

Recipe

Total time: 8 hours 25 mins

Servings: 20 scoops

Ingredients

  • 2 cups of full-fat cream (25-35 %fat)
  • 5 egg yolks
  • 1 cup of whole milk or full-fat milk
  • ⅔ cup of sugar
  • A pinch of rock salt
  • 3 big size fully ripe bananas
  • 1 tbsp of pure vanilla extract
  • 1 tbsp vodka
  • ⅔ cup of dark chocolate

Instructions

  • Ice Bath: Firstly we have to create an ice bath by placing some ice cubes and water in a large bowl. Now put one medium-sized bowl in the larger bowl of ice and water. Pour 2 cups of full-fat cream (25-35%fat) into the medium bowl.
  • In a separate bowl, whisk 5 egg yolks till they are well combined.
  • Put a saucepan over medium flame and add milk, sugar, and salt together in it. Keep stirring until the sugar gets completely dissolved. Do not let it boil.
  • Gradually pour half of the above milk into the bowl of whisked egg yolks, keep whisking constantly as you pour milk into it. 
  • Now on low flame slowly pour the whisked yolks into the remaining half milk in the saucepan, keep stirring constantly. This way we can prevent the eggs from scrambling.
  • Until this custard thickens, keep stirring constantly this egg-milk mixture over low heat and scrape the bottom of the saucepan with a wooden spoon. This custard should be thick enough to coat the back of the spoon.
  • Now strain the custard into the bowl of full fat cream over an ice bath and mix it well.
  • Take 3 fully ripe bananas and blend with half of the custard. Blend until  you get a smooth puree
  • Now pour this puree back into the bowl with the rest of the custard over an ice bath. Add the vanilla extract and vodka into it. 
  • Transfer the whole mixture into a shallow flat base ice cream container (seal with a cling wrap) or in an airtight box.
  • Chill it in the refrigerator for at least 5 hours or preferably overnight.
  • Now take out the ice cream box and churn ice cream in the ice cream maker according to the manufacturer’s instructions. Add the chocolate during the last 5 min of churning.
  • Then transfer the soft creamy dreamy banana ice cream with chocolate chunks to an airtight container and freeze for 3 hours or overnight.
  • Thaw your ice cream box for 10 minutes at room temperature before serving.

Serving & Presentation

Serve this velvety smooth banana ice cream in a bowl and drizzle some honey over it. Use a good quality ice cream scoop to serve the banana ice cream. You can go creative with your choice of toppings to create a perfect dessert. With banana ice cream, you can also make shakes, smoothies, sundaes, or other desserts also. You can add on several flavors to this recipe, like chocolate chips or dark chocolate, peanut butter, walnuts, etc.

Storage

Once prepared, banana ice cream should be served immediately, as it tends to turn blackish, due to high iron content. So storing banana ice cream is not recommended.

  • If you don’t want to use vodka then just take out ice cream from the freezer 10 mins prior to serving.
  • If the bananas you are using are fully ripe, use less sugar to retain the banana’s natural fruity sweetness.
