I thought I would share a fun fact about myself with you. Cookbooks is one of the types of books I’ve always loved. At one time I had thought about collecting cookbooks but I didn’t have a way to display the cookbooks I never took the time to invest collecting the cookbook books. I received Complete Month of Meals Collection: Hundreds of diabetes friendly recipes and nearly limitless meal combinations into our home. I know this cookbook is going to come in handy because my mother and father in law are Diabetics along with David’s brother Mike who lives with them. Now, I will be able to make them a meal. To thank them for all they do for not only Charlie and I but our entire family. Once I decided which recipe they would like the best and Charlie and I prepare the meal we will come back and share the results with you.

The cookbook is broken down into sections including What Can I Eat? Making Healthy Food Choices and How to Use This Cookbook. Along with Recipe Cards for (Breakfast Lunch, and Dinner). For those of us who love Desserts and different beverages this cookbooks has those items covered as well.

I love how the Author has included a top 10 list for foods everyone should eat to superpower there diet. These foods help with blood glucose and provide key nutrients that are lacking in the Western diet including calcium, potassium, fiber, magnesium, vitamins A, C and E. Which Charlie and I will research these vitamins

Our diet should include beans, Dark Green Leafy Vegetables, Citrus Fruit, Sweet Potatoes, Berries, Tomatoes, Fish High In Omega -3 Fatty Acids, Whole Grains, Nuts, and Fat-Free Milk and Yogurt. Looks like I need to add a lot of new foods to my diet including Tomatoes. How on Earth am I supposed to get David to eat Tomatoes and Vegetables?

I love how the Author encourages us to eat left-overs which saves on the grocery bill. There are requirements reminding us of how many calories we need a week. The Author has even included a meal tracker we can print extra copies of so we have one for each day of the month. With David and I not always eating the same foods I plan on making a tracker for each of us. The recipe cards can be taken out of the book and laminated and put into a file box or a folder creating a customized cookbook based on your families likes and needs.

For David I can’t wait to make Stuffed Mushrooms and I hope his mother or Mike will eat them with him for dinner. For me I can’t wait to make a Individual Egg Souffle which is for breakfast but I may have it for dinner. There is also a recipe for Breakfast Quesadilla’s which we all will eat for breakfast and even dinner. Would you like to join us/

Be careful when using the cookbook because all of the pictures will make you hungry. I can’t wait to purchase Complete Month of Meals Collection: Hundreds of diabetes friendly recipes for David’s mom and dad and even my sister would enjoy the recipes inside the cookbook.
