Did you know September 20th is National Fried Rice Day #NationalFriedRiceDay? As good as Fried Rice looks with all the Veggies I like I’ve never tried Fried Rice. Although, David loves Fried Rice and with Charlie’s friend Mikelia visiting I was thinking the kids could make Fried Rice for dinner.

Fried Rice first appeared in China’s Sui Dynasty and, consequently, all versions of this delicacy have their origins in Chinese Fried Rice.   3. Did you know the name ‘Benihana’ is Japanese for ‘red Safflower’ and happens to be the name of the Coffee Shop owned by Hiroaki Aoki’s who was Benihana founder’)’s parents in Tokyo.
  4. Here is a fun fact for you that I can’t wait to share with Charlie and David. Benihana’s owner, Hiroaki Aoki, was a wrestler on Japan’s wrestling team at the 1960 Olympic Games.
  5. The calories in a single serving of Fried Rice match that of half a cup of Ice Cream.

Recipe for Fried Rice

Ingredients

  • ⅔ cup chopped baby carrots
  • ½ cup frozen green peas
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced, or to taste (Optional)
  • 2 large eggs
  • 3 cups leftover cooked and chilled white rice
  • 1 tablespoon soy sauce, or more to taste
  • 2 teaspoons sesame oil, or to taste

Directions

  1. Assemble ingredients.
  2. Place carrots in a small saucepan and cover with water. Bring to a low boil and cook for 3 to 5 minutes. Stir in peas, then immediately drain in a colander.
  3. Heat a wok over high heat. Pour in vegetable oil, then stir in carrots, peas, and garlic; cook for about 30 seconds. Add eggs; stir quickly to scramble eggs with vegetables.
  4. Stir in cooked rice. Add soy sauce and toss rice to coat. Drizzle with sesame oil and toss again.
  5. Serve hot and enjoy!
